Protein Pancakes or Waffles

Ingredients:

  • ¾ cup coconut or almond milk
  • 3 tbsp melted coconut oil
  • 2 eggs
  • 1 cup almond flour (or ½ cup almond and ½ cup pecan)
  • 1-2 scoops protein powder of choice (see Whole Food Nutrition Guide for recommended brands)
  • 2 tsp baking powder
  • 1 packet stevia or sweeten to taste
  • ½ tsp salt
  • (Optional) ghee

Directions:

  • Beat the milk, oil, and eggs together. Add dry ingredients and stir just enough to mix well.
  • Brush pan or griddle with oil – you probably know how to cook pancakes! These may take a little longer on each side.
  • Top with ghee or without any toppings.
