English Toffee Pecan Bars

Ingredients:

  • 3 eggs, beaten
  • 1 cup almond flour
  • ¼ cup light coconut milk
  • 30 drops English Toffee liquid Stevia
  • ½ cup pecan halves
  • ½ cup or more pecan pieces (smaller)
  • ¼ cup light coconut milk

Directions:

  • Grease a shallow 9” square pan with coconut oil.
  • Combine the first 4 ingredients in a bowl, mixing thoroughly.
  • Spread in bottom of the greased pan.
  • Top evenly with pecan halves, then sprinkle the smaller pecan pieces around to fill in “gaps” so surface is completely covered with pecans.
  • In a small cup, combine the final ¼ cup coconut milk and 30 drops of stevia. Drizzle this mixture over the top of the pecan surface.
  • Bake at 350 for 20 minutes. After removing from the oven, run a knife around the edge of the pan to loosen. Then, cool (or not) and remove from the pan
