Healthy Stir-Fried Noodles

Ingredients:

  • 1 lb protein of choice, ie. shrimp, chicken, beef)
  • 2 cups veggies of choice, ie. zucchini, bok choy, celery, etc.
  • 1 packet shirataki or hearts of palm noodles (drained)
  • 1 tbsp fish sauce
  • 3 tbsp coconut aminos
  • 1-2 tbsp avocado oil
  • 1 tsp sesame seed oil
  • Optional add-in: 1-2 eggs
  • (Phase 2) 1 tsp ginger, grated
  • (Phase 2) 1-2 cloves garlic, minced
  • (Phase 2) 2 green onions, chopped

Directions:

  • Heat 1-2 tbsp avocado oil in a pan.
  • Saute protein of choice until cooked through. Remove from pan. 
  • Add and saute veggies of choice in same pan.
  • Rinse and drain shirataki or hearts of palm noodles.
  • Add cooked protein and noodles to veggies in saute pan. 
  • Mix and season with fish sauce and coconut aminos to taste.
  • Remove from heat and drizzle with sesame seed oil.
  • Optional add-in: Scramble 1-2 eggs on the side and add to noodles.
