Roasted Chicken with Herbs

Ingredients:

  • 3 pounds broiler chicken, uncooked
  • 1 tbsp sage
  • 1/2 tsp sea salt
  • 1 tbsp thyme leaves
  • 1 tbsp rosemary leaves

Directions:

  1. Preheat oven to 350 degrees F.
  2. If using fresh herbs, remove leaves with stems and chop.
  3. Combine thyme, rosemary, and salt in a small bowl.
  4. Wash chicken under cold water, trim excess fat and pat dry with paper towels.
  5. Starting at neck cavity, loosen skin from breast and drumsticks by inserting fingers, gently pushing between skin and meat.
  6. Rub herb mixture under loosened skin.
  7. Place chicken in a shallow roasting pan coated with olive oil.
  8. Bake for about 1 hour.
  9. Cover loosely with a cloth and let stand for 5-10 minutes before carving.
  10. Discard skin, carve and serve with vegetables or salad.
