Slow Cooker Paleo Swedish Meatballs

Ingredients:

For the meatballs:

  • 1 pound ground beef
  • 1 pound ground turkey
  • (Phase 2) 1 small onion, diced
  • 2 egg
  • 3 tbsp almond meal
  • 1 tbsp parsley, dried
  • ½ tsp salt
  • (Phase 2) 1/2 tsp garlic powder
  • (Phase 2) 1/2 tsp nutmeg

For the sauce:

  • 2 tbsp ghee
  • 3 tbsp arrowroot flour
  • 1 cup beef broth
  • 1/2 cup coconut milk
  • dash of salt
  • dash of parsley

Directions:

  • Combine all ingredients for meatballs in a large bowl.
  • Mix with hands to combine.
  • Shape into 2” balls.
  • Arrange meatballs in slow cooker.
  • Add all sauce ingredients except arrowroot flour in a pan over medium heat.
  • Add arrowroot flour 1 tbsp at a time and stir until smooth. Whisk for 3-4 minutes until sauce thickens.
  • Pour sauce over meatballs, cover with a lid and cook for 4 hours on low.
