In a bowl add the shrimp, ground cumin, ½ teaspoon of salt,1 ½ tablespoon of olive oil, red onion, half of minced garlic, garlic powder and onion powder. Toss to combine.
Spread the mixture into an even layer covering about 2/3 of the baking sheet.
In the same bowl add the zucchini noodles, remaining minced garlic, 1 ½ tablespoon of olive oil and ½ teaspoon of salt and toss to combine.
Transfer the zucchini noodles to the remaining space on the baking sheet.
Bake in preheated oven for 10-12 minutes or until the shrimps are cooked through.
Divide the zucchini noodles evenly between serving plates and top with shrimp and vegetables.
