Sheet Pan Shrimp with Zucchini Noodles

Ingredients:

  • 1 ½ pound shrimp, peeled and deveined
  • A bundle of Asparagus
  • 1/2 tsp ground cumin
  • 1 tsp salt
  • 3 tbsp olive oil
  • 2 zucchini, cut into noodles
  • (Phase 2) 1 red onion, sliced
  • (Phase 2) 1/2 tsp garlic powder
  • (Phase 2) 1/2 tsp onion powder
  • (Phase 2) 4 garlic cloves, minced
  • (Phase 2) lemon wedges, for serving

Directions:

  • Preheat oven to 450ºF.
  • In a bowl add the shrimp, ground cumin, ½ teaspoon of salt,1 ½ tablespoon of olive oil, red onion, half of minced garlic, garlic powder and onion powder. Toss to combine.
  • Spread the mixture into an even layer covering about 2/3 of the baking sheet.
  • In the same bowl add the zucchini noodles, remaining minced garlic, 1 ½ tablespoon of olive oil and ½ teaspoon of salt and toss to combine.
  • Transfer the zucchini noodles to the remaining space on the baking sheet.
  • Bake in preheated oven for 10-12 minutes or until the shrimps are cooked through.
  • Divide the zucchini noodles evenly between serving plates and top with shrimp and vegetables.
  • Serve with lemon wedges.
