Hi Protein, Corn-Free “Cornbread”

Surprisingly easy and good – a great compliment to bean soup or chili!

Ingredients:

  • ½ Cup Almond Flour
  • ¾ Cup Brown Rice Flour
  • ½ Cup Amaranth or Seed Flour
  • (Amounts and types of flours can be varied -just be sure they total 1-¾ Cups)
  • 1 Tbsp Baking Powder
  • ½ Teaspoon Salt
  • 1 Cup Coconut Milk or Almond Milk
  • 2 Eggs
  • 2 Tbsp oil

Directions:

  • Preheat oven to 400 degrees and lightly oil an 8” square or 9” round pan.
  • Combine all ingredients in a bowl and mix just until blended.
  • Pour into greased pan and bake for 20 minutes.
