1 cup seeds of choice, ie. pumpkin, sunflower seeds, flax
1 cup almonds
1/2 cup unsweetened dry, shaved coconut
1-2 tbsp ghee
Instructions:
In a blender blend the dates until they are of a semi puree consistency. Chop all the nuts into small pieces.
In a saucepan on low heat, mix melted ghee and add blended dates. Stir until it becomes a paste and you’re able to fold it with a spatula.
Remove the dates and add the chopped nuts & seeds while it is hot and mix everything with a spatula until all the seeds and nuts are evenly mixed in.
Let the mixture cool down a bit (not completely room temperature).
Spoon out mixture and roll into balls with hands.
Take the dry coconut and spread it out on a dish or paper plate and roll the date roll in the coconut so that it is somewhat covered with coconut.
Place balls in a freezer safe storage contained lined with parchment paper. Store in the fridge for a couple of hours. Afterwards, balls will be ready to eat.
