Becky’s Seed Crackers

Ingredients:

  • 1/3 cup almond flour
  • 1/3 cup sesame seeds
  • 1/3 cup sunflower seeds
  • 1/3 cup flaxseed or chia seeds,
  • 1/3 cup pumpkin seeds
  • 1 tsp psyllium husk
  • 1 tsp pink or sea salt
  • 1 cup boiling water
  • 1/4 cup coconut oil
  • 15 drops of vanilla liquid stevia (to taste)

NOTE: use all raw organic seeds

Directions:

  • Preheat oven to 300 degrees.
  • Mix all dry ingredients in a bowl.
  • Add coconut oil and boiled water to dry ingredients.
  • Work dough to form a ball & gel like consistency.
  • Place 1/2 the dough on parchment paper. Place a second piece of parchment on top of the dough. Press with your hand to flatten. Then, finish rolling dough flat with a rolling pin.
  • Transfer to cookie sheet with parchment paper. Then, remove top parchment paper. Repeat previous step with the other 1/2 of the dough.
  • Bake for 40-45min.
  • Turn off oven, crack oven door open and leave crackers in oven to dry.
  • Once crackers are dry and cool. Break into peices.
  • Store crackers in an air-tight glass container.
