Vitamix Almond Meal Pancakes

Ingredients:

  • ¾ cup almond or coconut milk
  • 3 eggs
  • 1 tsp vanilla
  • 1 ½ cup almond meal or flour
  • ¼ tsp sea salt
  • ½ tsp baking soda
  • 1dropper of liquid Stevia (add more to taste)

Directions:

  • Preheat griddle on low.
  • Place milk, eggs, and vanilla into Vitamix container and mix for 15 seconds, going from #1 to #7. Then, reduce speed to #5.
  • Add dry ingredients through lid opening. Replace lid plug and run 5-10 seconds until mixed.
  • Spray griddle with coconut oil. Scoop batter to make 3-inch pancakes. Cook 3-5 minutes each side.
  • Top with ghee or place in bowl with milk and eat like cereal.
